A melt-in-your-mouth roast, topped with maple mustard and spices, simmering gently all day long. The house fills with an enticing aroma, and dinner is ready when you get home — Québec comfort food at its finest.

Ingredients

  • 1 pork roast
  • Onions
  • Chicken or vegetable broth
  • Maple mustard
  • Maple spices
  • Salt and pepper

Preparation

1

Brown the roast

Sear the pork roast over high heat in a pan. Place a bed of sliced onions at the bottom of the slow cooker, then place the roast on top.

2

Season

Brush the roast generously with maple mustard. Season with salt, pepper, and maple spices. Pour broth around it.

3

Simmer

Cook on low for 8 to 10 hours. Serve with the caramelized onions and cooking juices.

Tip

Prepare it in the evening and start the slow cooker in the morning — by dinner, the roast will fall apart with a fork and the sauce will be ready to serve.
